OK, FINE. Classic Chicken Noodle Soup is already pretty good for you. But we made this even healthier by loading it up with lots of kale, using low-sodium stock, and opting for boneless skinless chicken breast. This courgette salad is so easy to throw together, and best of all, there’s no cooking required! Toad in the hole is great, but not exactly vegan friendly. However our vegan toad in the hole should absolutely do the trick. Made with vegan sausages (we used Linda McCartney’s) and lots of fresh veggies, the batter is made using unsweetened soya milk.
