I doubled it for the 5 of us who have been consuming and we had about four good sized pancakes left over. These were by a large margin the worst pancakes I’ve ever had. They got here out crepe thin, dense/rubbery, and flavorless. I ended up retrying the recipe and added about an extra half cup of flour, an extra egg, and vanilla, and lo and behold they have been nice.

It is straightforward to make if you are looking for a Filipino dessert. This is a pleasant tender cake – certainly one of my Mom’s specialties from years ago.

I let the batter sit about 10 minutes while my pan got good and scorching and the batter was real thick once I began cooking. There is no vanilla on this recipe, and I in all probability would have added some, but I am out.
